Pico de Gallo

1 1/2 lbs red tomatoes, seeded and chopped
3/4 cup chopped onion
1/2 cup chopped fresh cilantro
3 tablespoons of fresh lime juice
2 1/2 serrano chiles, stemmed, seeded, and minced
3 1/4 tsp of salt
freshly ground black pepper to tatse

- Mix in all ingredients in a medium ball
- Season with salt and pepper
- Cover and chill for at least 30mins
(The salsa can be made 4 hours ahead)
